Kiritsuke (切付) means “cut off” or “slanted” — referring to the distinctive angled tip shape resembling a sword. It is a multipurpose knife similar in use to the Gyuto. Blade length: 210–240 mm. Kiritsuke is a hybrid of two traditional single-beveled Japanese knives — Yanagiba and Usuba. Traditionally single-beveled, modern Kiritsuke knives are also made double-beveled for everyday use, making them more practical while retaining the elegant form. It features an inverted tanto-style tip and a straight cutting edge. Compared to Bunka, Kiritsuke is longer and has a narrower profile.
